This a pretty crazy thing to think about. I mean if humans go extinct, it will becomes of a disease that we cannot survive or an change in the environment that doesn’t allow us to live. So assuming its most likely environmental change, so less oxygen, nitrogen and more CO2, leading to warmer temperatures and more arid/desert type land, whatever life comes after us has to survive very hot temperatures and use CO2 to metabolise energy or sunlight. Maybe some of the anerobic bacteria that already exist will survive and slowly evolve into more complex life forms or plants relying on mainly sunlight for energy conversion with lower nitrogen requirements. I would assume that the higher forms of life that evolve from these bacteria or plants, will not have skin like ours as they would need something more resistant to sun. Perhaps these human like people that come after can convert energy from sunlight and metabolise their own nutrients and minerals through biological pathways rather than food! Its so difficult to give one definite answer to this, but the possibilities are almost infinite!
