We work under fume hooms and laminar flows. So they are hoods that you work underneath. The air flows back into the hood and upwards and not into your face. We UV all of our equipment, wear gloves and labcoats. All in all, I’ve never gotten sick from working with faecal material or oysters, so once you are following the rules you are safe!
